Bringing quinoa and kale together in this delicious and refreshing summer salad!
What you need:
- 1 1/2 cup uncooked quinoa
- 3 cups water
- 2 cups of fresh kale, very thinly chopped
- 2 carrots, grated
- 1⁄4 cup sunflower seeds
- 1⁄4 cup green onion chopped

Quinoa Preparation:
- Bring water to a boil. Add quinoa and reduce heat to medium, let cook for approximately 12-15 minutes
- Take stems out of kale leaves. Thinly chop. Steam for 3-5 minutes
- Add grated carrot, sunflower seeds, and green onion
- Mix dressing ingredients together, and add to quinoa and vegetables
- Can serve hot or cool.

Dressing:
- 1/3 cup olive oil
- 1 squeeze lemon
- sea salt to taste
- 1/2 tsp sage
- 1/2 tsp thyme
